- A mí me gusta prepararlo todo antes de cocinarlo..Por lo tanto me gusta picar bien la cebolla, los pimientos, las pechugas.
- A continuación preparo un fumé de pescado : las cabezas de langostinos junto con la sepia y un poquito ñora picada la echo a una cacerola con aceite de oliva y lo cocino un rato..añado vino blanco y después subo el fuego y le echo 3litros de agua junto con un tomate y 1/2 cebolla.. También se le puede echar morralla de pescado.
- Luego preparo en un vaso de mayonesa : echo 4 tomates maduritos 2 dientes de ajo, un poco azafrán, ñora picadita y lo paso todo por la turmix.
- Echo un chorrito de aceite en la paellera y voy cocinando los langostinos, junto con la sepia...Saco los langostinos y sepia y reservo...
- Ahora cocino en la paellera del aceite de los langostinos echo la carne de las pechugas bien picadita..y cuando estén hechas, hago un hueco en el centro de la paellera y cocino la verdura...Después añado la mezcla del vaso de mayonesa que contenía tomate ajo y ñora..lo voy cocinando lentamente..Añado un poco de vino blanco y dejamos que se evapore el alcohol..
- A continuación añado la sepia a la paellera junto con la carne, verdura y tomate.Lo vamos cocinando unos minutos..
- El último paso es añadir el arroz a la mezcla anterior (2puñados por persona) y dejamos que se cocine con todo unos minutos..
- Por último añado el fumé de pescado que habremos colado previamente. A mí me gusta tapar todo el arroz con el caldo.
- Subimos el fuego el primer minuto y luego rectificamos de sal...Después bajo el fuego y lo dejo cocinar unos 19 minutos a fuego normal. Tapamos 5 minutos y servimos...ummmm que rica!!!
- Ojo!! Rectificar de sal e ir probando el caldo besitos
