- 4 Claras de huevo
- 2/3 cucharaditas maicena
- 2 Pastillas caldo de pollo
- 15/20 gr. jengibre natural en rodajas. (también sirve en polvo)
- 10 gr. sal
- 1500 gr. Agua

- En una olla, ponemos el agua, la sal, el jengibre y las pechugas o contramuslos de pollo. Llevamos a ebullición y mantenemos a fuego medio alto durante 30 minutos.
- Mientras tanto vamos cortando los palitos de cangrejo y las zanahorias en tiras muy finas. Pelamos y limpiamos los langostinos. Cortamos el pescado en cubitos y reservamos.
- Una vez transcurridos los 30 minutos de cocción, retiramos de la olla las pechugas o contramuslos, y el jengibre.(si este fuese natural, en polvo no es necesario).
- En el caldo incorporamos, las dos pastillas de caldo, el pescado, los langostinos, la zanahoria, los palitos de cangrejo y el maíz o guisantes y dejamos cocer a fuego medio durante 10/12 minutos.
- Vamos añadiendo a la olla, las claras de huevo sin dejar de mover con una cuchara.(solo las claras y sin batir).
- Por último añadimos la maicena diluida en un poco de agua fría, la cebolleta bien picada, sin dejar de mover con la cuchara.
- Dejamos cocer un minuto más, apagamos el fuego y dejamos reposar 15 minutos antes de servirla.
- Recomendaciones........se puede utilizar maíz o guisantes, e incluso añadir los dos pués también convinan muy bien en esta sopa aportando además un toque de color lo que la convierte en más atractiva.
