- Por otro lado, cortamos los pimientos, cebolla, el tomate y el chile (quitarle las venas y las semillas para que no pique demasiado). Reservamos.
- Por otro lado, troceamos la pechuga en trozos no muy pequeños y los sazonamos con 2 cucharaditas de taco mix* (ver receta ya publicada) y lo sofreímos en una sartèn grande con el aceite de oliva unos 5 minutos, se retira y reservamos.
- En la misma sartén, y aprovechando los jugos del pollo, salteamos la cebolla, los pimientos y el chile durante unos 5 min hasta que estén tiernos, y luego añadimos las judías cocidas (y lavadas), el cilantro y el maíz (lavado) y seguimos salteando unos 2-3 min más.
- A continuación, añadimos el arroz y el pollo reservado y otras 3 cucharaditas de la mezcla taco mix*, se remueve todo y seguimos sofriendo 5 min.
- Se retira del fuego, y decoramos con un poco de perejil.
- Dejamos reposar unos 10 min y listo, a disfrutar....está delicioso!!
