  4. Pelamos las gambas. En una olla al fuego con sal, laurel y pimienta cocemos las cáscaras de las gambas y hacemos un caldo que posteriormente colamos y reservamos.
  5. Echamos el sofrito en una paellera. Añadimos un vaso de arroz por persona y el doble de agua y un vaso más. Añadimos las especias y el Avecrem. Probamos el caldo y comprobamos el punto de sal.
  6. Añadimos el pimiento rojo en tiras y después las gambas peladas.
  7. Cuando queden 5 minutos antes de apagar el fuego añadimos los gambones. Reposamos.
